Your hosts, Jaime and Mimi, alongside their transport company, decided on a side hustle and opened Macondo in January 2017. They had turned an old industrial demountable into a vibrant restaurant with an industrial kitchen and a magnificent garden refuge for native wildlife & humans alike.
